Harvested at maturity in less than 8 days, the grapes are sorted, destemmed and then wake to enter fermentation naturally. After pressing the marc, a second fermentation takes place: Malolactic fermentation giving the wine a great aging potential.
These fermentation taking place in stainless steel tanks and cement with thermic regulation. The different vintages continue to mature in French oak barrels for several months.
